Description
Domaine Francois Chidane is based in the Loire, and cultivates vines in a handful of the sub AOCs in the valley. This rosé, a blend of Pinot Noir, Gamay, and Grolleau, comes from the appellation of Touraine. This cuvée comes from plots with flint clay and clay-limestone soils located in towns in the Cher valley, such as Chissay-en-Touraine and Saint-Julien-de-Chédon.
The harvest is done manually. No chemical phytosanitary product is used. The soils are plowed, and melliferous and nematicidal plants are sown in the rows (plants that naturally do the job of chemical herbicides/pesticides/fungicides). Fermentation is conducted with indigenous yeasts in stainless steel vats at low temperature, and the wine is aged on the lees until bottling.
Smatterings of red berries, particularily strawberry and sour cherry, a touch of melon on the mid-palate, lots of citrusy liveliness, and a lovely limestone minerality to tie it all together. Very much a good food wine for lighter dishes.
