Description

Cascahuin, a pre-hispanic word, meaning “cerro de luz” or “hill of light” in english, is a distillery whose idea of innovation is to look as much as possible to traditional production methods. To this day, all of their agave is sourced from the local valleys area in the “lowlands” of Jalisco, and cooked in their original stone brick ovens installed in 1904. The volcanic soils in the lowlands often yield smaller agave plants, and make them work harder for the nutrients that they get; making the resulting spirit more dense, and rich in a myriad of flavours. 

The reposado is aged for 6 – 8 months in used american oak barrels.

Tasting notes:

Dense flavours of cooked agave, stone fruits, a touch of honey, volcanic minerality, lots of herbaceous notes hiding in the background, a light toffee-esque influence from the oak, and a pleasant vanilla on the finish
