Description
Toro is a wine region in Castilla y León, north-western Spain, just a little way downstream from Ribera del Duero. It is well-known for its powerful, full bodied, and often “rustic” red wines made from Tinta da Toro (Tempranillo). It is a relatively extreme climate, with moderate influence from the Atlantic, and is quite a dry region with low annual rainfall (between 350 to 400 mm), temperatures ranging from –11ºC to +37ºC, and up to 3000 hours of sunlight each year. This climate of contrasts provides exceptional conditions for the cultivation of the vine. Topsoils are quite rocky and sandy and thus quite hot, but the soils are very free-draining and allow for cool respite for the deep root structures of the vines.
Natural spontaneous fermentation, without added sulphates, in open stainless steel tanks with temperature regulation. Maceration of 12 to 14 days with manual twice-daily punch down, and one final délestage. Maturation is 50% in tanks with bâtonnage (lit. stirring settled lees) and micro-oxygenation, and 50% 12 months in 225-litre American oak barrels with maximum of 20% new barrels. Deep purple in the glass. An intense aroma of red fruits, with a balsamic and spicy touch. A surprise to the palate for its freshness, density and body.
